Holy Cannoli!

I was quite surprised by how awesome this cupcake turned out. This little delight is made from vanilla-cinnamon cake, filled with homemade cannoli filling and topped with cream cheese icing and mini chocolate chips. A new twist on a classic italian dessert.

How it all began...

What's in a name? A lot actually. When I was in elementary school I realized all of my friends had nicknames and I was left out of the loop. I told my dad about my dilemma so he asked me what I wanted to be called. I gave some thought to it and told him I wanted to be called Scooter...which I originally spelled it Scotter. Thus when I needed a name for my creations, Scooter was without a doubt my only option.

How do cupcakes tie into all of this? My mother is the one who taught me how to cook and bake. I would stand in our kitchen and beg her to teach me what she was doing, most of the time she did and she was also scared when I tried. As I got older she realized I was getting the hang of this. She would let me start cooking meals for our family on my own; of course she would chime in and give me her opinion on how she would have done it but for the most part I did it all on my own. When I moved away to college I really got to explore how to cook on my own. My roommates and boyfriend would be my testers and always gave me their honest opinions. I love cooking and baking all different things, I don't discriminate between pasta and pot roast, pies and chocolate. But most of all, I love cupcakes. For no real reason why other than the sheer love of baking an individualized miniature cake with the perfect amount of icing to make someone smile.
